Kaitlin of I Can Cook That prepared a recipe from The Perfect Protein, Eric Ripert's Clams with Spicy Sausage, and the results look delectable:

I was reminded of this recipe as a suggestion to make on World Oceans Day as a Perfect Protein blogger (more information on that in my post on Thai Coconut Mussels), which was June 8. So. Um. I’m a little late. But this recipe is too tasty not to share!This recipe can be found in the book The Perfect Protein: The Fish Lovers Guide to Saving the Oceans and Feeding the World and is from the ultimate seafood chef, Eric Ripert. This man knows his fish; one of his restaurants, Le Bernardin is known as a seafood mecca. But this recipe is really easy to make and cooks quickly, making it perfect for weeknight meals

Beth of Real Moms Love to Eat also shared an incredible-looking recipe for the week, Citrus-Glazed Tilapia!

Citrus Glazed Tilapia
Olive or vegetable oil
1 pound tilapia filets
1/2 teaspoon black pepper
1 1/2 teaspoons San-J Tamari Lite 50% Less Sodium Gluten Free Soy Sauce
2 tablespoons orange juice
2 tablespoons honey
2 tablespoons orange marmalade
1/2 teaspoon dry mustard powder
Preheat the broiler.
Brush a baking sheet with oil. Brush both sides of the tilapia with oil and sprinkle with pepper. Broil until the fish flakes easily, about 7 minutes.
While the fish is cooking combine the remaining ingredients in a small pan and bring to a boil. Boil for 1 – 2 minutes or until the glaze is thick. Top the cooked fish with the glaze and serve.

My boyfriend and I could not get enough of this meal. The mussels are absolutely fantastic! We were looking for pieces of bread to sop up the coconut broth after we had ran out of rice, it’s that good. I always feel so accomplished when a 30 minute meal comes out as delicious as this one did, despite just following directions. This one is definitely a keeper!
